Coconut Snowballs

An easy, delicious and healthy snack that your kids will have fun making and will love eating!

As moms, we are always looking for that elusive snack that satisfies everyone. It needs to be delicious (so that our kids actually want it), easy (because who has time for a snack that takes an hour to make?), and we also want it to be healthy. This recipe fits every category. Plus, the kids can help make it! Our Junior Chefs loved making these this month, and they ate every single one!

Ingredients:

1 1/4 cup old fashioned oats
1/2 cup Wow Butter (you can use any form of nut butter if allergies are not a concern)
1/2 cup honey
1/2 cup coconut flakes, unsweetened

  1. Blend the oats until finely ground in a Magic Bullet or blender. 
  2. Measure the Wow Butter and honey in a bowl. Mix.
  3. Add the ground oats and continue to stir until combined.
  4. Roll into small balls (we used 1 tablespoon of the mixture per ball).
  5. Roll the balls in the coconut. Ensure that they are completely covered. 
  6. Serve.

Tip: These are great frozen! To freeze, place balls on a parchment or wax paper covered cookie sheet. Freeze for 30 minutes. Remove and place in a freezer bag and back in the freezer for easy access!
